Quick and easy dinners

Try these quick and easy ways to get healthy dinners in to your lifestyle. The key here is a little bit of planning and prep and you’ll save yourself hours of valuable time slaving in the kitchen. You just need to but a slow cooker and have a large frying pan or wok.

Try these quick and easy slow cooker meals. Of course you can use fresh veg – but pre-chopped frozen veg is so quick and easy to sue.

Beef stew
• Diced beef
• Frozen veg – onions, mixed peppers, Mixed peas, baby carrots, broccoli and cauliflower
• Water to cover the food
• Salt and pepper

Lamb curry
• Diced lamb
• Frozen veg – onions, mixed peppers, Mediterranean Veg,
• Tin of tomatoes
• 1-2 tablespoons of curry paste

Chicken stew
• 3-4 chicken drumsticks
• Frozen veg – onions, mixed peppers, stewing veg (potato, swede and carrot),
• Water to cover the food
• Salt and pepper
You could blend this with a hand held blended to make a thick soup.

Simply put it on in the morning and it’s cooked when you get home.

On the weekend when you have an hour spare try making one or two of these meals and then freeze portions of them that you can defrost each day and heat up for dinner. All you need is one or two large frying pans.

Lasagne sauce
• 500g of minced beef
• Frozen veg – onions, mixed peppers, Mediterranean Veg, stewing veg
• Tin of tomatoes
• Rosemary or Thyme

Chilli sauce
• 500g of minced beef
• Frozen veg – onions, mixed peppers, Mediterranean Veg, stewing veg
• Tin of tomatoes
• Tin of kidney beans in chilli sauce
Thai green chicken curry
• Mixed seafood or mixed fish (fresh fish pie mix)
• Frozen veg – onions, mixed peppers, Mediterranean Veg, stewing veg
• 1-2 tablespoons on Thai green curry paste
• 1 tin of coconut mil

Serve with Zero Noodles, gluten free buckwheat pasta, ready cooked Tilda whole grain rice, or Slim Pasta – or even serve on a bed of veg – spinach / kale / diced green beans.
